So the oil light and warning ding is coming on when I stop, but then it goes away. I thought maybe the oil was low, but I checked and it's just above the safe mark on the dipstick. Considering she takes seven quarts, that means it can't be more than a quart low, right? So what could be throwing the warning?
It needs to pointed out that the reason it is being suggested that the oil pressure sending unit is suspect, is because its been reported on here in the past - making it only "appear" it is common. That's it. You can throw parts at it willy-nilly or you can test the system to make sure. Given how critical oil pressure is to the service life of any engine, the latter might prove to be more prudent to rule out a pending oil system failure.
Hot / idle oil pressure can be as low as 4-5psi and is considered serviceable (obviously, this would be on an engine with with a lot of miles on it).
The oil pressure sender is indeed common enough to recommend that as the issue as of right now. When left to be they will start leaking, it may even be leaking now. The sensor is cheap and that ps where I would start.
