Anyone have any idea why I keep blowing the header to mid-pipe gasket?

maybe you over tightened the bolts and the flanges are not true any more. that is the most common reason for header collector leaks.
Mine blew too with the Mopars. Replaced them with some copper gaskets from Summit, and no more problems (although there was an ever so slight leak through 'em)

I had a bolt begin to back-off after initial installation and nearly blew a gasket. Thankfully it didn't and was just able to tighten the bolt back down to seal it up again. Next time I go to my exhaust guy, I'm going to have him put on some locking header bolts. These are a must for every header installation IMO.
