K, I'm starting with an '07 Ram, doing a ported eagle head swap with the thicker head gaskets, so compression ratio should be in the 11.0 range. I will also be running a Zex kit through an 85mm Nitrous Outlet plate and building up to a 125-150hp shot for track days. I'm pretty set on the nitrous side of things, I'm just wondering what plugs I should be running, whether I should be running 1 step colder or 2 steps colder. I will be running 91 octane at best and will have a nitrous tune, but I keep flip-flopping over my plug choice given the slightly higher compression ratio from the head swap.
Basically I just need to know if I'll be fine with the 1 step, or if I'm just safer with the 2 step colder.

I vote 2 steps colder.
Colder might hurt gas mileage but will leave your engine intact.
You will be safer with 2 Steps colder
I would suggest the Brisk Version:
Nitrous Outlet » Online Catalog » Hemi Race Plug, Non-Projected, 2 Steps colder on 6.1 & 5.7

Dang, too bad you didn't post sooner, I already ordered new NGKs for $1.50 more per. I would have prefered non-projected but couldn't find any, at least now I'll know where to go when I need track-day swaps.
It's all about the location of the tip and insulator. A projected tip will stick out further from the body of the plug and tends to retain more heat because it's not dissipated into the plug body/head as quickly as a non-projected plug which has more of its surface area inside the plug body to dissipate heat. This means that even with a colder stage plug, your tip temp will remain higher and will reduce the amount of spray that you can run or you risk detonation just as if you didn't have colder plugs at all.
Have a look at this thread, lots of good info Lets Talk Hemi Spark plugs and Nitrous.
