Launching a 5.7 with the stock converter

Well, only have made a few track passes with my mag, and was looking for some insight from others with typical bolt-on mods. Which tactics work better:

    ESP on or off?
Flat pedal it, or brake torque it?
If brake torque, what RPM to dump it at?

From the few passes I have made, I got to assume that a stall converter must do wonders for these heavy, tall geared beasts... I definately added one of those to my future shopping list!
