I'm using Photoshop CS3(Windows Version) for this lesson
Open up your photo

I use these settings
More Feathering will give a softer edges
Larger Width will give you a larger tool
Contrast will look at the differences in dark and light areas that you are cutting out
Frequency put down more or less anchors
http://i136.photobucket.com/albums/q176/HazmanAvatarKing/Lessons/CutoutTool02copy.jpg
After the first pass of the Magnetic lasso you need to change tool to the Lasso

http://i136.photobucket.com/albums/q176/HazmanAvatarKing/Lessons/CutoutTool03copy.jpg
With this tool you can chip away the area you missed
Be sure to hold down the key for cutting /adding
http://i136.photobucket.com/albums/q176/HazmanAvatarKing/Lessons/CutoutTool05copy.jpg
After you have a good section
From the Edit pull down menu Copy and then Paste into a new layer
Will need to get a small eraser and clean up your edges

That's it
Easy
